P2 Apple Cobbler
Ingredients:*for the filling*
1 Large Apple
1 Teaspoon Apple Pie Spice
1/8 cup Lemon Juice
Stevia to taste
*for the topping*
2 Melba Toasts
1 Teaspoon Coconut Oil
1/4 Teaspoon Apple Pie Spice
Stevia to taste
Instructions:
Set Oven to 350 degrees
Core and cut the Apple up into bitty pieces and put in a large bowl. Mix in Apple Pie Spice, Lemon Juice, and Stevia.
Crush the Melba Toasts and mix with Coconut Oil, Apple Pie Spice and Stevia.
Place the Apple in a small baking dish, top with topping, and bake in preheated oven for 30 min,

It's the Halloween Post! Yay! I'm posting...something honestly more suited for Thanksgiving. Cobbler.
You've all been doing it wrong up until now. Two Melba Toasts are not suited form a crust much less a crust and a topping. No, better sprinkle it on top and enjoy maximum topping to apple ratio for the first ten bites. At the end of a cold day, this is honestly as good as it gets on P2.
Apples are HUGE this time of year. I enjoy the luxuriously expensive Honey Crisp Apple. They're big, and sweet, and I love them. But this recipe will work for your commoners apples, too. Keep in mind, this is a calorie spender, so make sure you plan ahead if you want one. Don't forget you have to count those Melba Toasts. Everything else should be free. Let's get started. Set your oven to 350.

This recipe is honestly so simple I'm having a hard time thinking of things to say about it. Basically, cut it up all little. I don't care how you do it, as long as there's no blood involved. I know it's Halloween. Control yourself.
Then add this stuff. Mix it up. Think about that time you waved at someone who was waving at someone behind you. Cringe. Drag your psyche forward and move on with your life.

Crush the Melba Toasts. I use a meat tenderizer. Dump stuff in there, preferably the ingredients listed and pictured above. That little guy hiding behind the bowl is Apple Pie Spice. He's a bit shy. Mix it up till it's all crumbly.
By now I figure you've worked out the whole mixing process, so we'll move on to putting the apple mix filling in a small baking dish and sprinkling the topping on top. This cute little guy is what I use. I like to put each apple pie in an individual pan if making multiples, so that everyone can be assured that they've gotten a full apple. To me, being sure you've eaten what you've planned on this diet is important. You might get too little, or Zeus forbid too much. Then, stick it in the oven at 350 for 30 minutes
